Well, we were very dedicated. Our youngest ds was starting to eat table food and we were having a really hard time keeping some of it from Alex. So, we gradually let him try it and didn't see any difference. He still does very little dairy, but otherwise we aren't restricting him too much. Unfortunately, it wasn't enough of a change to keep him (and everyone elase) on such a difficult/strict diet. We were extremely dedicated for over two years, though.

2.5 years is pretty dedicated. I am so hoping this sensitivity has to do with the lack of beneficial bacteria, etc. and that healing his gut will help him tolerate at least gluten again at some point in the future.
